Chocolate the first

Hi Im Irene.

As you can guess from the title of my blog I am a chocoholic.. I let this be known to everyone so there is never any doubt as to what my chosen gift is for birthdays, Christmas, or other sundry celebrations.

I hope I will receive many interesting chocolate recipes on my blog.

I certainly know about that ! remember the days of rationing for a kit-kat? hope you are getting enough chocolate to get through these few weeks of hard work with your family

Hey, I think that I should have posted my recipe here :)

So here we go again - enjoy.

DARK CHOCOLATE POTATO TRUFFLES
(recipe from Western Potatoes)

Preparation time: 1 hour 30 mins 
Cooking time: 10 mins
Makes: 40

300g dark chocolate buttons
2 ½ tblspn cream
125g butter
½ cup almond meal
½ medium potato, cooked, mashed
¾ cup coconut
21/2 tblspn Drambuie or any liqueur
100g dark chocolate buttons, extra (for coating truffles)

Place a bowl over a saucepan of boiling water. Do not allow the bowl to touch the water. Add chocolate buttons, cream and butter. Stir until the mixture has evenly melted. Remove from the heat. In a separate bowl, mix the almond meal, mashed potato, coconut and liqueur. Combine both mixtures, mix gently. Refrigerate until set. Roll mixture into small balls and place in the freezer for 10 minutes. Melt extra chocolate, as before. Set aside for five mins. Dip each truffle into the chocolate to coat. Place onto a tray. Refrigerate for 15 mins.
